About this recipe

Braised beef short ribs: Succulent, caramelized beef ribs seared to perfection, simmered in a rich red wine and herb-infused sauce, and slow-cooked until tender, resulting in a mouthwatering, comfort-food favorite.

Ingredients

  • 5 - 6 beef short ribs
  • 2 tsp salt
  • 2 tsp  pepper
  • 3 tbsp olive oil
  • 3 garlic cloves
  • 1 large white onion
  • 5 celery stalks, chopped
  • 2 carrots , chopped
  • 500ml dry red wine
  • 1000ml beef stock
  • 10 sprigs rosemary
  • 2 bay leaves
  • chives (optional) to garnish

  1. Preheat your oven to 200°C then season the beef short ribs generously with salt and pepper on all sides.
  2. In a large, oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat. Ensure the pan is large enough not to overcrowd the ribs. Sear the short ribs on all sides until they are very dark and caramelized. This step is crucial for building flavor. Do it in batches if necessary.
  3. Remove short ribs from pan and set aside.
  4. In the saucepan add the diced onion, chopped celery, and chopped carrots to the pan. Cook for about 5 minutes, or until the vegetables begin to soften and the onions turn translucent.
  5. Delgaze by adding in the dry red wine and beef stock then use a wooden spoon to scrape up any browned bits from the bottom of the pan, add the rosemary sprigs and bay leaves. Stir to combine all the ingredients.
  6. Cover the pan with tin foil or a lid to lock in the flavor. Transfer it to the preheated oven and braise for about 4 hours, or until the meat is tender and easily pulls away from the bone
  7. Occasionally, check the ribs to ensure they are simmering gently and add more beef stock and wine if needed to prevent them from drying out.
  8. Once the short ribs are tender, remove them from the oven.
  9. Carefully remove the ribs to a side plate and sieve the sauce to keep the liquid.
  10. Add your corn flour then whisk until a thickened sauce.
  11. Serve the braised beef short ribs with the rich sauce and your choice of side dishes like mashed potatoes, polenta, or steamed vegetables.
