Fox's Jam and Cream Biscuits

About this recipe
Fox's Jam and Cream Biscuits are (in my opinion one of the best UK biscuits). Buttery shortbread with a jam and cream filling. Let's make it at home and just as delicious!
Ingredients
Dough:
100g unsalted soft butter
175g caster sugar
1 large egg
1 tsp vanilla essence
250g plain flour
Filling:
6-10 tbsp strawberry jam
75g butter
150g icing sugar
2 tbsp double cream

- Mix butter and sugar until mildly creamed.
- Add the egg, vanilla and flour then mix until combined
- Once formed a dough, chill dough for 30 mins
- Roll the dough to a depth of 5mm and cut out your biscuit with a cookie cutter or glass cup
- Bake for 10 - 15 mins at 190°C ( keep your eye on these you don't want these to brown!)
- While the biscuit is cooling, create your buttercream by combining all ingredients, cold butter helps your buttercream to be stiff enough to pipe, if your buttercream is too runny add more icing sugar or allow it to solidify in the fridge.
- Pipe small dots onto your bottom biscuit allowing space in the middle for the jam.
- Spread the jam in the middle of the biscuit and sandwich the top biscuit together.
