Cajun Chicken Pasta

About this recipe
This creamy, indulgent chicken pasta is a perfect quick midweek recipe. Make your chicken ahead and add when you've made the pasta!
Ingredients
Cajun Chicken
2 chicken breast
1 tbsp Cajun seasoning
1 tbsp parsley
salt and pepper to taste
Sauce
3 bell peppers
300ml double cream
100ml milk
75g Parmesan
25g cheddar cheese
1 tbsp Cajun seasoning
1 tbsp parsley
salt and pepper to taste
175g Pasta

- Dice lengthwise your bell pepper and chicken (this creates a larger surface area resulting in it being cooked quicker!) and set aside.
- For your chicken, and marinate with the seasonings above and fry chicken in hot oil until cooked white inside and set aside. I like to heat my oven to 50 degrees and keep it warm in there.
- In the same oil used to fry your chicken add your bell peppers, garlic paste and the same seasonings for the chicken and cook until the pepper has softened around 5 mins.
- Next, add cream, parmesan and cheddar until a thick sauce. If too thick add milk to loosen the sauce.
- Add your cooked pasta and a ladle of pasta water and mix until the sauce completely covers the pasta.
- Serve with chicken, and more parmesan and enjoy.
