Indulge in a cozy treat with this homemade banana bread! It's got that perfect blend of gooey dark chocolate and sweet, ripe bananas, all wrapped up in a buttery, browned crust. Best enjoyed with a hot cup of coffee or a cold glass of milk. Perfect for satisfying those sweet cravings any time of day!

Ingredients

  • 115g browned butter (allow to cool down)
  • 100g chopped dark chocolate
  • 3 very ripe bananas + 1 halved on top
  • 55g brown sugar
  • 75g caster sugar
  • 1 egg
  • 1 tbsp vanilla extract
  • 200g plain flour
  • 1 tsp bicarb of soda

  1. Preheat your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper, leaving some overhang for easy removal.
  2. In a medium-sized mixing bowl, combine the browned butter, brown sugar, and caster sugar. Mix well until the sugars are fully incorporated into the butter.
  3. Add the egg and vanilla extract to the butter-sugar mixture. Mix until everything is well combined.
  4. In a separate bowl, mash the three ripe bananas, you don't want them completely smooth as the chunky bananas are great for texture.
  5. Add the mashed bananas to the wet ingredients and mix until well combined.
  6. In another bowl, whisk together the plain flour and bicarbonate of soda.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; it's okay if there are a few lumps.
  8. Gently fold in the chopped dark chocolate into the banana bread batter.
  9. Pour the batter into the prepared loaf pan. Smooth the top with a spatula.
  10. Take the remaining banana half (halved lengthwise) and place it on top of the batter for decoration.
  11. Bake in the preheated oven for 55-65 minutes or until a toothpick inserted into the center of the bread comes out clean or with just a few moist crumbs.
  12. Once done, remove the banana bread from the oven and let it cool in the pan for about 10 minutes. Then, use the parchment paper overhang to lift it out of the pan and place it on a wire rack to cool completely.
  13. Once the banana bread has cooled, slice it and enjoy your homemade banana bread with a delicious chocolate twist!
