Boxed Red Velvet Cake But Better

About this recipe
Red Velvet Cake is one of the best cakes but if you are not a confident baker you may want to use a boxed cake. So here are some tips I use to make them taste 10x better.
Ingredients
Cake:
- 1 Red Velvet Boxed Cake
- 3 Eggs
- 200ml Buttermilk
- 1 tsp baking soda (not powder)
- 1 tbsp white wine vinegar
- 150g melted butter
Cream Cheese Frosting
- 65g butter
- 125g cream cheese
- 500g icing sugar

Instructions
- Preheat your oven to 180 degrees celcius.
- Combine all cake ingredients, except the baking soda and vinegar, in a medium-sized bowl and mix until a batter.
- Create a little well in the batter and add your bicarb soda and vinegar until it fizzes and reacts. Then Mix into your batter.
- Line an 8-inch cake tin with greaseproof paper and ensure there is an overhand so that the cake can rise as much as needed and not be stodgy. If you have spare batter make cupcakes, you can then smush them as decoration later.
- Pour the cake mixture into the pre-lined cake tin and bake for 25-28 minutes.
- While the cake is baking, make your cream cheese frosting by whipping your butter until pale and white.
- Add your icing sugar and cream cheese then mix until combined.
- Once the cake is out of the oven and cooled scoop your frosting onto the cake and smoothen out and enjoy!
